Whip up these family-friendly chicken Kiev patties in a snap using your pie maker. A definite must-have on your recipe rotation.
Ingredients:
  • 85g butter, at room temperature
  • 3 garlic cloves, crushed
  • 20.00 ml finely chopped fresh chives
  • 20.00 ml finely chopped fresh continental parsley leaves
  • 1 tsp chopped fresh thyme leaves
  • 1kg chicken mince
  • 65g (1 1/3 cups) panko breadcrumbs
  • 2 eggs
Instructions:
  • Mix together the butter, garlic, chives, parsley, and thyme in a small bowl. Season with your favorite seasoning. Scoop heaping teaspoons of the butter mixture onto a baking paper-lined plate (you should have 8 portions). Chill in the freezer for 15 minutes or until firm.
  • Next, combine the chicken and 15g (1/3 cup) breadcrumbs in a bowl and season them. Lightly whisk the eggs in a shallow bowl and place the remaining breadcrumbs on a plate.
  • With damp hands, divide the chicken mixture into 8 equal portions. Use your thumb to create an indentation in the center of each portion, place a piece of butter in the indent, and shape the mixture around the butter to form patties the size of a pie maker hole.
  • Prepare a baking tray with a layer of baking paper. Dip each patty into the egg and breadcrumbs for coating, then transfer to the tray. Repeat this process with the rest of the patties. Chill in the fridge for 30 minutes before moving on.
  • Preheat the pie maker and lightly grease the holes. Cook half of the patties for 10-12 minutes, flipping halfway through, until they are beautifully golden and fully cooked. Repeat with the remaining patties, remembering to grease the holes each time. Serve the patties warm and enjoy!
