Try our modern twist on the classic pineapple upside-down cake, made conveniently in a Kmart pie maker. Great for a delicious afternoon treat or dessert.
Ingredients:
  • 227g can pineapple slices in juices
  • 150g (1 cup) self-raising flour
  • 70g (1/3 cup) caster sugar
  • 75g butter, melted
  • 80ml (1/3 cup) milk
  • 1 egg, lightly beaten
  • 4.40 gm vanilla extract
  • 32.00 gm brown sugar
  • Extra 40g butter, melted
  • 8 glacé cherries
  • Double cream, to serve
Instructions:
  • Strain the pineapple, saving the juice. Slice each pineapple piece into quarters.
  • Combine flour and caster sugar in a bowl, then mix in butter, milk, egg, and vanilla until a thick batter forms.
  • 1. Preheat the pie maker until hot. 2. Sprinkle 1 teaspoon of brown sugar into each hole, followed by 1 teaspoon of melted butter. 3. Place 2 pieces of pineapple and 1 cherry in the center of each hole. 4. Spoon 2 tablespoons of batter over the fruit mixture in each hole. 5. Close the lid and cook for 8-10 minutes until golden brown and set.
  • Gently transfer the cakes from the pie maker to a wire rack lined with baking paper to cool. Drizzle the hot cakes with some reserved pineapple juice. Repeat the process with the remaining ingredients. Serve the cakes warm or at room temperature with cream.
