Pineapple, passionfruit & mint punch

Irresistible summer fruit punch for all to enjoy.
Ingredients:
  • 2 (about 1.7kg each) ripe pineapples, peeled, halved lengthways, hard core removed, coarsely chopped
  • 250.00 ml firmly packed fresh mint leaves
  • 2 x 750ml bottles chilled sparkling wine
  • 1L (4 cups) bought apple juice
  • 500ml (2 cups) strained fresh passionfruit pulp
  • 40.00 ml green ginger wine (Stone's brand)
  • 1000.00 ml ice cubes
Instructions:
  • Combine fresh, juicy pineapple and fragrant mint in a food processor. Pulse until finely crushed.
  • Pour the pineapple mixture into individual serving jugs. Mix in sparkling wine, apple juice, passionfruit, ginger wine, and ice. Stir well to combine and serve immediately.
