Pineapple, rum & ginger relish

Exciting rum-infused pineapple relish - versatile for grilling, baking, or as a topping!
Ingredients:
  • 13.80 gm rice bran oil
  • 1 brown onion, finely chopped
  • 1 tsp coriander seeds
  • 1 tsp mustard seeds
  • 3 whole cloves
  • 1 long fresh red chilli, thinly sliced
  • 2cm-piece fresh ginger, peeled, finely grated
  • 60ml (1/4 cup) dark rum
  • 55g (1/4 cup, firmly packed) brown sugar
  • 40.00 ml white wine vinegar
  • 800g fresh pineapple, peeled, cut into 1cm pieces
  • Grilled pork cutlets, to serve
Instructions:
  • In a saucepan over medium-low heat, sauté the onion, coriander seeds, mustard seeds, and cloves in oil until the onion is soft, about 3-4 minutes. Stir in the chilli and ginger and cook for an additional minute.
  • Combine rum, brown sugar, and vinegar in a pot. Cook and stir for 2-3 minutes until the sugar dissolves. Bring to a boil, then simmer for 2 minutes until slightly thickened. Stir in the pineapple and bring to a boil again. Reduce heat, simmer for 10 minutes, stirring occasionally until slightly softened. Let it cool a bit before serving with grilled pork cutlets.
