Indulge in springtime sweetness with these delightful pineapple friands.
Ingredients:
  • 6 egg whites
  • 199.50 gm icing sugar mixture
  • 187.50 ml plain flour
  • 75.00 gm almond meal
  • 200g butter, melted
  • 125.00 ml macadamia nuts, toasted, finely chopped
  • 240g pineapple
  • Icing sugar mixture, to serve
Instructions:
  • Preheat your oven to 190°C/170°C fan-forced and grease a 12-hole, 1/2 cup-capacity oval friand pan.
  • In a mixing bowl, whisk egg whites until frothy for about 30 seconds. Add sifted sugar and flour, then incorporate almond meal, butter, macadamia nuts, and pineapple. Gently stir until just combined.
  • Spoon the mixture into the prepared molds, bake for 18-20 minutes until a skewer comes out clean, cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar and serve.
