Tropical-inspired banana bread with pineapple and macadamia nuts for a delicious breakfast or snack.
Ingredients:
  • 2 cups white sugar
  • 1 cup unsalted butter, at room temperature
  • 3 large eggs, at room temperature
  • 2 cups mashed bananas
  • 1 (8 ounce) can crushed pineapple in juice, drained
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup chopped macadamia nuts
Instructions:
  • Preheat the oven to 350°F (175°C), then generously grease and flour two 8 1/2x4 1/2 loaf pans.
  • In a large mixing bowl, cream together the sugar and butter on medium speed for about 2 minutes until creamy. Add eggs one at a time, mixing well after each addition. Gently fold in the mashed bananas, crushed pineapple, and vanilla.
  • Combine flour, salt, baking soda, and cinnamon in a separate bowl and whisk until fully blended. Mix in macadamia nuts until well coated. Add this flour mixture to the banana mixture and gently stir until just combined.
  • Gently distribute the batter among the loaf pans that have been prepared.
  • Bake in the preheated oven for about 1 hour and 10 minutes, or until a toothpick inserted in the centers comes out clean.
  • Allow the pans to cool for 10 minutes, then transfer the baked goods to a wire rack to cool completely, approximately 20 minutes more.
