Pineapple Coconut Bars

Tropical pineapple coconut treats, perfect for a luau.
Ingredients:
  • 0.5 cup shortening
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 (8 ounce) can crushed pineapple
  • 0.5 teaspoon rum
  • 0.75 cup all-purpose flour
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup flaked coconut
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and generously grease a 9-inch square baking pan.
  • Cream together the shortening and brown sugar in a large mixing bowl until smooth. Mix in the eggs, pineapple, and rum until well combined. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, beating until fully incorporated. Stir in the coconut and spread the batter evenly in the pan.
  • Bake for 25 to 30 minutes until golden brown. Allow to cool on a wire rack before slicing into delectable bars.
