Pina colada bars: Buttery base topped with pineapple, coconut, and macadamia nuts for a tropical twist.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup butter, softened
  • 2 tablespoons white sugar
  • 0.5 cup firmly packed brown sugar
  • 2 eggs
  • 0.5 teaspoon rum extract
  • 0.5 teaspoon salt
  • 1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
  • 0.75 cup sweetened flaked coconut
  • 0.5 cup chopped macadamia nuts
  • 1 cup confectioners' sugar
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix flour, butter, and white sugar. Beat with an electric mixer on low, scraping the bowl often, until the mixture resembles coarse crumbs. Press into the bottom of an 8-inch square baking pan.
  • Bake the crust in the preheated oven for 12 to 17 minutes, until set but still pale.
  • In a bowl, mix together brown sugar, eggs, 1/2 teaspoon rum extract, and salt until well combined using an electric mixer on medium speed. Add pineapple, coconut, and macadamia nuts. Spread the filling over the hot crust.
  • Bake until the filling is set and the top is lightly browned, about 25-30 minutes in the preheated oven. Allow to cool completely for about 25 minutes.
  • Combine 5 teaspoons of reserved pineapple juice, confectioners’ sugar, and 1/2 teaspoon rum extract in a small bowl and whisk until a glaze forms.
  • Drizzle the glaze over the cooled filling and cut into bars.
