Tropical-inspired bars for a blissful escape!
Ingredients:
  • 1 can (8 ounces) crushed pineapple
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup butter or margarine, softened
  • 3 tablespoons powdered sugar
  • 1 cup granulated sugar
  • 3/4 cup chopped macadamia nuts
  • 1/2 cup flaked coconut
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon rum extract
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons reserved pineapple juice
Instructions:
  • Preheat the oven to 350°F. Grease the bottom and sides of an 8x8x2 or 9x9x2-inch square pan with shortening. Drain the pineapple well, saving 3 teaspoons of juice for the Pineapple Glaze. In a medium bowl, combine 1 cup of flour, butter, and 3 tablespoons of powdered sugar with a spoon until the flour is moistened. Press the mixture into the pan and bake for 10 minutes.
  • In a medium bowl, whisk eggs until blended, then stir in pineapple and all remaining Bar ingredients. Spread mixture over the partially baked crust.
  • Bake the bars until they are a beautiful golden brown, usually around 25-30 minutes. Allow them to cool completely for about an hour.
  • Mix all Pineapple Glaze ingredients until smooth and thin. Drizzle over bars cut into 6 rows by 4 rows.
