Pineapple coconut margarita recipe

Transport yourself to a tropical paradise with each sip of these pineapple coconut margaritas!
Ingredients:
  • 250g frozen pineapple pieces
  • 200ml light coconut cream, chilled
  • 125ml tequila
  • 60ml liqueur
  • 2 limes, zested, juiced
  • Shaved fresh coconut or flaked coconut, to serve
  • Dried pineapple flowers
  • 1 small pineapple, peeled, very thinly sliced
  • 2.50 gm caster sugar
Instructions:
  • 1. Preheat your oven to 100°C and line a large baking tray with parchment paper. 2. Place the pineapple on a clean surface and pat dry with paper towels. 3. Transfer the pineapple slices to the lined tray and sprinkle with sugar. 4. Bake for 1 hour, then flip the slices and bake for another hour or until they are dry to the touch. 5. Allow the dried pineapple flowers to cool completely before using.
  • Combine pineapple pieces, creamy coconut, tequila, triple sec or your favorite liqueur, fresh lime juice, and sugar in a food processor. Blend until velvety smooth.
  • Divide the coconut mixture into the serving glasses. Top with fresh lime zest and shredded coconut. Garnish with dried pineapple flowers.
