Large Family Pie: Perfect for gatherings.
Ingredients:
  • 1 cup margarine
  • 0.25 cup cornstarch
  • 1 pinch salt
  • 3 egg yolks
  • 1 (20 ounce) can crushed pineapple, juice reserved
  • 2 cups milk
  • 1.5 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 3 tablespoons milk
  • 3 eggs, beaten
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Prepare the filling by combining cornstarch, sugar, and salt in a bowl, then mix in egg yolks and 1/2 cup of pineapple juice. Heat the milk until scalded, then whisk in the cornstarch mixture and cook until thickened. Let it cool slightly before adding 3/4 cup of drained pineapple and vanilla. Set aside to cool.
  • Make Dough: Start by sifting together flour, salt, and baking powder in a large bowl, then cut in the margarine. In a small bowl, lightly beat the milk and eggs together. Combine the egg mixture with the dry ingredients and mix until a smooth dough is formed.
  • Divide dough in half. Roll out each half between floured wax paper sheets to fit a jelly roll pan with a slight overhang on edges.
  • Place one of the rolled dough halves in the pan and generously spread the cooled filling. Cover with the remaining rolled dough and seal the edges by crimping the layers together.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes, or until golden brown. Allow to cool, then frost with confectioners' icing if desired.
