Pineapple-studded fritters with a sweet pineapple glaze - a unique treat combining the best of bread and doughnuts.
Ingredients:
  • oil for frying
  • 1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
  • 1 cup self-rising flour
  • 0.5 cup milk
  • 1 egg
  • 2 cups white sugar
  • 2 tablespoons confectioners' sugar for dusting, or as needed
Instructions:
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • Combine pineapple, flour, milk, and egg in a bowl and whisk until you have a light and fluffy batter.
  • In a small saucepan, gently bring the pineapple juice to a boil. Stir in white sugar until dissolved, then reduce heat and simmer until a thick glaze forms, about 10 minutes. Once done, remove from heat and let it cool to room temperature for about 15 minutes.
  • Fry spoonfuls of batter in hot oil in small batches until golden brown, about 3 to 4 minutes. Drain on paper towels.
  • Drizzle the glaze over the fritters and sprinkle with confectioners' sugar.
