Transform pineapple fritters into a tropical delight with a hint of rum.
Ingredients:
  • 1 egg
  • 250.00 gm water
  • Syrup, to serve
  • 4 slices pineapple
  • 525.00 gm pineapple juice
  • 118.80 gm brown sugar
  • 62.50 ml Bacardi
  • 250.00 ml plain flour
  • 4.00 gm baking powder
  • Cream, to serve
Instructions:
  • In a saucepan over medium heat, gently simmer pineapple juice and brown sugar for 25 minutes until the mixture is reduced by half. Let it cool slightly before stirring in Bacardi.
  • In a bowl, combine plain flour and baking powder. Create a well in the center and add the egg and water. Whisk until the batter is smooth.
  • In a saucepan, pour light olive oil to reach one-third up the side. Dip 4 slices of peeled and cored pineapple into batter. Cook in 2 batches on high heat until golden. Drain and serve with syrup and cream.
