Impressive centerpiece ham, perfect for Christmas feast.
Ingredients:
  • 100g (1/2 cup, firmly packed) brown sugar
  • 80ml (1/3 cup) maple syrup
  • 1 tsp Chinese five spice
  • 5 x 440g cans pineapple slices in juice, drained, juice reserved
  • 7-8kg whole leg ham, on the bone
  • 150g glace cherries
  • 500ml (2 cups) water
Instructions:
  • Preheat your oven to 180C/160C fan forced. Place a shelf in the lowest position, line a large roasting pan with non-stick baking paper, and remove any extra shelves.
  • In a small saucepan, combine brown sugar, maple syrup, Chinese five spice, and 125ml (1/2 cup) of reserved pineapple juice from cans. Cook over low heat, stirring, for 2-3 minutes until the sugar dissolves. Let it gently simmer for 5 minutes until slightly reduced.
  • With a small sharp knife, cut around the shank of the ham in a zig-zag pattern about 10cm from the end. Gently slide the knife under the rind around the edge of the ham. Remove the rind in one piece by separating it from the fat with your fingers.
  • Layer pineapple rings over ham, securing each cherry with a toothpick in the center of the ring. Ensure rings slightly overlap and use toothpicks to secure any loose ends.
  • 1. In the prepared pan, pour water and place the ham on a wire rack, wrapping the exposed shank in foil. 2. Brush one-third of the glaze over the pineapple and bake for 40 minutes. 3. Rotate the pan 180 degrees and pour over half of the remaining glaze. 4. Bake for an additional 40 minutes until golden, then brush with the rest of the glaze. 5. Let it rest for 15 minutes before carving, making sure to remove the toothpicks.
