Indulge in a tropical Pineapple Mimosa Cake featuring Betty Crocker™ Super Moist™ mix for a delightful treat.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ white cake mix
  • 3/4 cup orange juice
  • 1/2 cup pineapple juice
  • 1/3 cup vegetable oil
  • 3/4 teaspoon grated orange peel
  • 3 egg whites
  • 1/2 cup butter, softened
  • 5 cups powdered sugar
  • 1/4 cup champagne or sparkling wine
  • Additional grated orange peel, if desired
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch pan with cooking spray.
  • In a large bowl, combine cake mix, orange juice, pineapple juice, oil, 3/4 teaspoon orange peel, and egg whites. Mix with an electric mixer on low speed for 30 seconds, scraping the bowl constantly. Increase speed to medium and beat for 2 minutes, scraping the bowl occasionally. Transfer batter to pan.
  • Bake for 25-30 minutes until a toothpick inserted in the center comes out clean. Allow to cool completely on a rack for about 1 hour.
  • In a large bowl, cream butter with an electric mixer until creamy. Gradually mix in 2 cups of powdered sugar on low speed. Alternate adding the remaining 3 cups of powdered sugar and champagne, beating until the frosting is smooth. Frost the cake, decorate with extra orange peel, and refrigerate covered.
