Cozy pineapple rice pudding with tropical coconut milk twist. Perfect winter dessert for the whole family.
Ingredients:
  • 1 l milk
  • 70g (1/3 cup) caster sugar
  • 110g (1/2 cup) medium-grain white rice
  • 4.40 gm vanilla extract
  • 450g can crushed pineapple, drained
Instructions:
  • Combine milk and sugar in a large saucepan over medium heat until sugar dissolves. Add rice, bring to a simmer, then reduce heat to low.
  • Cover the pot, leaving a small gap with the lid, and cook for 1 hour, stirring occasionally every 10-15 minutes, until the rice is creamy, tender, and all the milk is absorbed.
  • Gently mix in the vanilla. Gently fold in the majority of the pineapple, saving some for garnish. Spoon rice pudding into bowls and top with the remaining pineapple. Serve right away.
