Tender sirloin strips marinated in a flavorful blend of soy sauce, ginger, and vanilla vodka, served with stir-fried pineapple over rice.
Ingredients:
  • 1 (8 ounce) can pineapple chunks - drained with juice reserved
  • 2 teaspoons rice wine vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon olive oil
  • 1 teaspoon vanilla-flavored vodka
  • 0.5 teaspoon brown sugar
  • 0.5 teaspoon white sugar
  • 1 (1 1/2-pound) beef sirloin steak, cut into 1/4-inch strips
  • 1.5 cups water
  • 0.5 cup long grain white rice
  • 2 tablespoons olive oil
Instructions:
  • Combine 1/3 cup of reserved pineapple juice with rice wine vinegar, soy sauce, olive oil, vanilla vodka, ginger, brown sugar, and white sugar in a mixing bowl. Stir until well blended, adjusting sugar to taste.
  • Add the steak strips to a spacious zip-top plastic bag. Pour in the delicious pineapple juice mixture, then seal the bag. Gently massage the bag to ensure the steak is perfectly coated with the marinade. Let it chill in the fridge for 3 to 4 hours.
  • Place a saucepan over medium-high heat to bring water to a boil. Stir in the rice, then lower the heat, cover, and let it simmer for 20 minutes.
  • In a skillet over medium heat, warm up 2 tablespoons of olive oil. Transfer steak strips from the marinade into the skillet. Sauté the steak strips until they are golden brown and fully cooked, about 2 minutes on each side. Cover and set aside to keep warm.
  • Add the pineapple chunks to a separate skillet and cook over medium heat until they are just tender and warm, for about 4 minutes. Serve by dividing the rice evenly between two bowls, then garnish with steak strips and pineapple chunks, giving it a quick toss before enjoying.
