"Quick and delicious spicy grilled chicken with pineapple glaze – ready in 40 minutes!"
Ingredients:
  • 2 tablespoons packed dark brown sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons ground allspice
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper (cayenne)
  • 4 boneless skinless chicken breasts
  • 2 tablespoons vegetable oil
  • 1/2 cup pineapple juice
  • 1/4 cup real maple syrup
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 2 teaspoons Dijon mustard
Instructions:
  • Combine brown sugar, salt, coriander, allspice, cinnamon, cumin, and red pepper in a 9-inch pie plate; set aside.
  • Tenderize chicken by pounding each piece between plastic wrap or wax paper to 1/4-inch thickness using a meat mallet, pounder, or rolling pin.
  • Drizzle oil over chicken and massage it gently. Coat one piece of chicken with spice mixture, ensuring an even layer on all sides. Place on plate and repeat with remaining chicken.
  • In a small saucepan, bring all glaze ingredients to a boil over medium heat. Simmer uncovered for 10 minutes, stirring occasionally, until the glaze thickens to a syrupy consistency and reduces to 1/2 cup. Take off the heat and set aside 2 tablespoons of the glaze to brush over the chicken.
  • Prepare the grill by coating the rack with cooking spray or brushing it with oil, then preheat the grill to medium-high heat. Grill the chicken uncovered for 4 to 5 minutes on each side, or until the juices run clear and the thickest part of the chicken reaches 170°F when cut.
  • Once the chicken is nearly cooked, generously brush it with 2 tablespoons of the reserved glaze. Grill for an additional minute. Remove the chicken from the grill and finish by drizzling it with the remaining glaze.
