Pineapple-Peach Jam

Tangy pineapple and sweet peaches jam, perfect for duck sauce.
Ingredients:
  • 8 overripe peaches, peeled and halved
  • 1 ripe pineapple, peeled and cut into 1-inch pieces
  • 2 lemons, juiced
  • 7 tablespoons regular pectin
  • 4 cups white sugar
Instructions:
  • Place 8 to 10 half-pint jars in warm water while preparing the sauce. Wash lids and rings with soapy water and set them aside.
  • In a large pot, mix peaches and pineapple together. Cook over medium heat, stirring occasionally until fruit juices are released, for about 6 to 10 minutes. Mix in lemon juice continuously. Stir in sugar, then add pectin. Cook and stir until slightly thickened, for about 2 minutes.
  • Fill hot, sterilized jars with jam, leaving 1/4 inch of space from the top. Remove air bubbles by running a knife or spatula around the inside of the jars. Clean the rims with a moist paper towel. Seal with lids and screw on rings until finger-tight.
  • 1. Position a rack in a large stockpot and fill halfway with water. Bring to a boil. 2. Carefully lower jars into the boiling water, making sure they are 2 inches apart, using jar tongs. 3. Add more boiling water to cover jars by at least 1 inch. 4. Bring back to a rolling boil, cover with a lid, and process for 10 minutes.
