Sweet potatoes elevated with pineapple, brown sugar, and sunflower nuts for a perfect balance of flavor and texture.
Ingredients:
  • 2 medium dark-orange sweet potatoes
  • 1/4 cup drained crushed pineapple in juice (from 8-oz can)
  • 1 tablespoon sunflower nuts
  • 2 tablespoons packed brown sugar
Instructions:
  • Preheat the oven to 375°F. Scrub the potatoes and pierce them all over with a fork. Arrange them in a shallow baking pan or pie pan (avoid using glass). Bake for 55 to 65 minutes until they are tender.
  • Preheat the oven to broil. Halve the potatoes lengthwise and gently mash the cut sides with a fork. Spoon pineapple over the cut sides of the potatoes, then sprinkle with sunflower nuts and brown sugar.
  • Broil 4 to 6 inches from heat for 2 to 3 minutes until brown sugar is bubbly.
