Pink lemonade marshmallow cakes

Make heartfelt homemade treats as a thoughtful gift - wrap them with love and a touch of ribbon!
Ingredients:
  • 250g butter, softened
  • 215.00 gm caster sugar
  • 8.80 gm vanilla extract
  • 2 eggs
  • 300.00 gm self-raising flour
  • 250.00 ml plain flour
  • 125.00 ml lemonade
  • 84.98 gm milk
  • Sprinkles, to decorate
  • 285.95 gm caster sugar
  • 18.00 gm gelatine powder
  • 40.00 gm boiling water
  • Rose pink food colouring
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and line two 12-hole muffin pans with paper cases.
  • Beat butter with sugar and vanilla using an electric mixer for 5 minutes until light and fluffy. Add eggs one at a time, mixing just until combined. Stir in flours, lemonade, and milk until combined. Divide mixture evenly among paper cases.
  • Bake cakes one tray at a time for 15 to 17 minutes until golden and a skewer comes out clean. Let them stand in pans for 5 minutes before transferring to a wire rack to cool completely.
  • Create Marshmallow magic by heating sugar and cold water until dissolved, boiling until slightly thickened, then adding gelatine mixture and whisking until fluffy. Cool slightly, then beat until thick. Add a touch of pink food coloring for a delightful hue.
  • Quickly spoon dollops of marshmallow mixture onto each cake, add sprinkles for decoration, let sit for 10 minutes, and then serve.
