Bacon-infused whole pinto beans: a delicious twist on refried beans!
Ingredients:
  • 3/4 lb mesquite-flavored bacon, cut into 1-inch pieces
  • 1 cup chopped onions
  • 2 cloves garlic, crushed
  • 3 cans (15.5 oz each) pinto beans, drained, rinsed
  • 1 can (12 oz) beer or beef broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon coarsely ground black pepper
  • 1/4 teaspoon salt
Instructions:
  • Cook the bacon in a 4-quart saucepan or Dutch oven over medium-high heat until crisp. Place on paper towels to drain, then set aside 2 tablespoons of drippings in the saucepan.
  • Sauté onions and garlic over medium-high heat for 5 to 8 minutes until onion is softened.
  • Combine all remaining ingredients, excluding bacon, thoroughly. Lower the heat to medium and cook for 18 to 20 minutes, stirring occasionally until the mixture slightly thickens. Add all the bacon pieces except for 1/4 cup. Crumble the rest of the bacon and sprinkle it on top of the beans. Serve promptly.
