Savory pinto beans with caramelized onions, crispy bacon, and charred jalapenos.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 2 to 3 whole jalapeño chile peppers
  • 2 to 3 thick-cut slices of bacon
  • 2 cups chopped onion
  • 2 medium clove garlic, minced
  • 4 cups cooked pinto beans (2 15-ounce cans, rinsed and drained)
  • Salt
  • 1/2 cup, loosely packed, fresh cilantro, chopped
Instructions:
  • Prepare jalapeños: Heat oil in a skillet over high heat. Add jalapeños and coat with oil. Cook evenly until browned on all sides for about 10-15 minutes. Remove from pan, then discard stem, core, seeds, and veins. Coarsely chop the jalapeño flesh.
  • Cook bacon in a large skillet over medium-low heat until crispy. Transfer bacon to a paper towel-lined plate. Keep 2 tablespoons of bacon fat in the pan.
  • Saute onion in bacon fat over medium-high heat until translucent and lightly browned. Stir in minced garlic and cook for one more minute. Chop the cooked bacon while the onion cooks.
  • Combine the cooked beans, diced bacon, and chopped jalapeños in the pan, stirring them gently to blend flavors. Season with a sprinkle of salt. Garnish with fresh cilantro before serving alongside steak and salsa.
