Irresistible pistachio white chocolate chip cookies - addictive after just one bite!
Ingredients:
  • 1 cup of sugar
  • 1 cup of unsalted butter, at room temperature
  • 1 cup of dark brown sugar, packed
  • 2 large eggs
  • 2 tablespoons of milk
  • 2 teaspoons of vanilla extract
  • 2 1/2 cups of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of kosher salt (can sub table salt)
  • 1 cup of rolled oats
  • 1 1/2 cups of coarsely chopped pistachios, raw and unsalted
  • 1 1/2 cups of white chocolate chips
Instructions:
  • Preheat the oven by setting it to 350°F.
  • Cream together the butter and sugars: Beat on high speed for 3 minutes until light and fluffy.
  • Combine eggs, milk, and vanilla extract. Beat vigorously for 3 minutes, making sure to scrape down the sides for thorough mixing.
  • Mix together dry and wet ingredients: In a separate bowl, mix flour, baking soda, baking powder, salt, and rolled oats. Gradually add the dry mixture to the butter mixture, scraping the sides of the bowl as needed for thorough mixing.
  • Incorporate the pistachios and white chocolate chips: Gently mix in the pistachios and white chocolate chips.
  • Shape the cookies: Spoon generous teaspoonfuls onto parchment-lined cookie sheets. Optionally, top each dollop of dough with a few extra pistachios for decoration.
  • Bake at 350°F for 8 to 10 minutes until gorgeously golden. Let them firm up on the sheets, then transfer to a rack to cool fully.
