Pizza bianco with gorgonzola and zucchini

Indulge in a delicious homemade Italian pizza without needing a wood-fired oven.
Ingredients:
  • 500g bread and pizza plain flour
  • 1 tsp instant dried yeast
  • 4.80 gm salt
  • 60ml (1/4 cup) extra virgin olive oil, plus extra to drizzle
  • 310ml (1 1/4 cups) water
  • 2 zucchini, thinly sliced
  • 2 x 200g fresh mozzarella, sliced
  • 120g gorgonzola, crumbled
  • 125.00 ml fresh marjoram sprigs
Instructions:
  • In the bowl of a stand mixer with a dough hook, combine flour and yeast. Stir in salt and 2 tablespoons of oil. Gradually add water and mix for 15 minutes until the dough absorbs the water. Transfer the dough to a lightly oiled bowl, cover, and let it rise for 2 hours until doubled in size.
  • Preheat the oven to 250C/230C fan forced. Lightly grease two 30cm round baking trays. Divide the dough between the trays, then let it rest for 15 minutes. Gently push and stretch the pizza dough with your fingertips to cover the trays.
  • Coat zucchini in the remaining oil and season. Drizzle extra oil over pizza bases. Layer with zucchini, mozzarella, gorgonzola, and marjoram. Bake for 20 minutes until golden and cheese is melted.
