Elevate breaded chicken with pizza sauce, melty mozzarella, and zesty pepperoni for a delicious twist!
Ingredients:
  • 0.5 cup Italian-seasoned bread crumbs
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.5 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 2 skinless, boneless chicken breast halves
  • 0.5 cup pizza sauce, divided
  • 0.5 cup shredded mozzarella cheese, divided
  • 4 slices pepperoni, or to taste - divided
Instructions:
  • Preheat oven to 400°F (200°C) for the perfect cooking temperature.
  • In a shallow bowl, mix bread crumbs, Parmesan cheese, salt, and black pepper. In a separate bowl, place the flour. In a third bowl, whisk together the egg and lemon juice.
  • Coat each chicken breast in egg mixture, flour, egg mixture, and crumb mixture, then transfer to a baking dish.
  • Simply bake in the preheated oven until the chicken is heated through and the crumbs are golden, approximately 20 minutes.
  • Spread a generous 2 tablespoons of pizza sauce on each chicken breast, then layer with half of the flavorful mozzarella cheese and top off with half of the zesty pepperoni slices.
  • Continue baking the chicken until it is fully cooked, ensuring there is no pink inside and the juices run clear, for approximately 10 minutes. Make sure to use an instant-read meat thermometer to confirm the thickest part of the breast reads at least 160 degrees F (70 degrees C).
