Elevate pancakes with your favorite pizza toppings for a delightful twist on a classic dish - pancake mini-pizzas!
Ingredients:
  • 1 cup milk
  • 2 eggs
  • 1/2 cup shredded mozzarella cheese (2 ounces)
  • 1/2 cup chopped pepperoni
  • 1/2 cup chopped tomato
  • 1/2 cup chopped bell pepper
  • 2 teaspoons Italian seasoning
  • Pizza sauce or spaghetti sauce, if desired
  • Grated Parmesan cheese, if desired
Instructions:
  • Heat your griddle or skillet and grease if needed. Combine Bisquick, milk, and eggs in a large bowl until well blended. Add in all other ingredients except the pizza sauce and Parmesan cheese; the batter will be thick.
  • Ladle batter in generous dollops onto hot griddle, gently spreading it out.
  • Continue cooking until the edges are dry, then flip the dish and cook until it turns a beautiful golden brown. Serve by generously topping it with pizza sauce and a sprinkle of grated Parmesan cheese.
