Kids adore topping these delightful mini pizza pancakes, ready in just 30 minutes!
Ingredients:
  • 1/2 cup yellow cornmeal
  • 1 1/4 cups milk
  • 2 tablespoons chopped fresh chives
  • 1/2 cup marinara or pizza sauce
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/2 cup sliced mini pepperoni
  • 1 tablespoon chopped fresh chives
Instructions:
  • Combine Bisquick mix and cornmeal in a medium bowl. In a measuring cup, whisk together eggs and milk. Stir the milk mixture into the Bisquick mixture until well combined, then gently fold in 2 tablespoons of chives.
  • Preheat a large nonstick skillet or griddle over medium heat (325°F) and lightly brush with oil. Drop batter by 3 tablespoons onto the skillet to make mini pancakes. Once bubbles form on the surface and edges dry up, flip and cook until golden brown. Transfer to a plate and repeat with the rest of the batter.
  • Preheat the oven to broil.
  • Transfer the cooked pancakes to a parchment-lined baking sheet. Top each pancake with marinara sauce, cheese, pepperoni, and 1 tablespoon of chives. Broil the pancakes 4 to 5 inches from the heat for 1 to 3 minutes until the cheese is melted, golden, and bubbly. Serve hot and enjoy!
