Impress with a cheesy, one-pan pizza-inspired dinner.
Ingredients:
  • 9 x 2cm-thick slices day-old sourdough bread
  • 62.50 ml pizza sauce
  • 1 green capsicum, cut into 2cm pieces
  • 1/2 small red onion, thinly sliced
  • 125g cherry tomatoes, halved
  • 62.50 ml pitted sliced kalamata olives
  • 125.00 ml grated pizza cheese
  • 100g sliced double-smoked ham
  • 150g sliced pepperoni
  • 8 eggs
  • 386.25 gm milk
  • 2 garlic cloves, crushed
  • 1/2 tsp dried Italian herbs
  • 20.00 ml finely grated parmesan
  • Fresh basil leaves, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and grease a 7cm-deep, 19cm x 24cm oval ovenproof dish.
  • Gently brush sauce onto the cut sides of the bread. Mix capsicum, onion, tomato, olives, and pizza cheese in a bowl. Save 1/4 of the mixture for later. Arrange bread, ham, pepperoni, and capsicum mixture upright in the dish.
  • In a bowl, combine eggs, milk, garlic, and dried herbs, whisking until well blended. Season with salt and pepper, then pour the mixture over the bread.
  • Cover the dish with foil and bake for 50 minutes, or until the egg is starting to set. Remove the foil, sprinkle with the reserved capsicum mixture, and bake for an additional 20-25 minutes, or until the top is golden and the egg is fully set. Let it stand for 10 minutes before serving.
  • Garnish with freshly grated parmesan and fragrant basil leaves. Serve hot.
