Indulge in our modern twist on the classic English fruit fool featuring canned plums and decadent white chocolate.
Ingredients:
  • 2 x 825g cans Brand Whole Plums in Fruit Juice
  • 20.00 gm caster sugar
  • 180g pkt white chocolate
  • 300ml Brand Thickened Cream
  • 250g mascarpone
  • 1/2 tsp vanilla bean paste
  • 40.00 ml flaked almonds, toasted
Instructions:
  • Drain plums, saving 3/4 cup of the juice. Halve the plums, then remove and discard the stones. In a large frying pan, combine the reserved juice and sugar. Stir over medium heat until sugar dissolves, about 1 minute. Increase heat to medium-high and gently boil until syrup thickens and reduces to 1/2 cup, about 3 minutes. Allow to cool.
  • Place the chocolate in a microwave-safe bowl and microwave in 30-second intervals on medium power, stirring with a metal spoon, until melted and smooth (about 2-3 minutes). Let it cool. Beat the cream with an electric beater in a large bowl until soft peaks form. Gently combine the mascarpone with the cream, then fold in the melted chocolate and vanilla bean paste. Cover and refrigerate until serving.
  • Assemble the plums, plum syrup, and white chocolate cream in six 1 1/2-cup glasses, then garnish with a sprinkle of almonds.
