Ingredients:
  • 1 pound plums
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then give your baking dish a luxurious coating of cooking spray.
  • First, slice the plums in half, remove the pits, and then slice or quarter them based on their size. Arrange the plums in a baking dish in a single layer. Pour lemon juice over the plums, sprinkle with 2 tablespoons of sugar, cornstarch, and vanilla extract, then mix everything together until the plums are coated; let it sit for a moment.
  • Combine flour, 2 tablespoons of sugar, baking powder, and salt in a bowl, mixing thoroughly. Add butter in small cubes and blend into the mixture using a fork or pastry cutter until crumbly. Gently incorporate boiling water to make a dough, then spoon small amounts on top of the plums.
  • Bake for 25 to 30 minutes, or until a toothpick inserted into the cobbler dough comes out clean and the top is lightly browned.
