Fresh Plum Cobbler

Modern twist on a classic!
Ingredients:
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 4 cups sliced fresh unpeeled plums
  • 1 teaspoon lemon juice
  • 3 tablespoons shortening
  • 1 cup Gold Medal™ all-purpose flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • Whipping (heavy) cream, if desired
Instructions:
  • Preheat oven to 400°F.
  • In a 2-quart saucepan, combine 3/4 cup of sugar, cornstarch, and cinnamon. Add plums and lemon juice. Cook, stirring constantly, until the mixture thickens and comes to a boil. Let it boil and stir for 1 minute. Transfer the mixture to an ungreased 2-quart casserole dish and keep it warm in the oven.
  • Combine shortening, flour, 1 tablespoon sugar, baking powder, and salt in a medium bowl, cutting them together using a pastry blender or two knives until the mixture resembles fine crumbs. Stir in milk until a soft dough forms. Spoon 6 dollops of the dough onto the hot plum mixture.
  • Bake for 25-30 minutes until the topping turns a beautiful golden brown. Enjoy warm with a dollop of whipped cream.
