Indulge in cozy winter warmth with these delightful poached pears!
Ingredients:
  • 500mls (2 cups) water
  • 40g (1/4 cup, lightly packed) brown sugar
  • 1 lemon, rind finely grated, juiced
  • 2 cinnamon sticks, roughly broken
  • 1 200g pkt dried apricots
  • 1 250g pkt pitted prunes
  • 2 just ripe beurre bosc pears, peeled, quartered, cored
  • 1 200g carton low-fat natural yoghurt
Instructions:
  • In a medium saucepan, unify water, brown sugar, lemon zest and juice, and cinnamon sticks. Stir over medium heat until the sugar dissolves.
  • Bring the mixture to a boil, then add the apricots, prunes, and pears. Let it boil again, then lower the heat to medium-low and simmer uncovered for 5 minutes until the pears are tender. (Check out the microwave tip for a faster option.)
  • Once off the heat, cover the mixture and let it stand for 10 minutes. Remove any sizable cinnamon stick pieces. Serve the fruit in individual dishes, drizzle with syrup, and top with a dollop of yogurt.
