Poached Raspberry Pears

Delicious fruity dessert, serve warm or chilled.
Ingredients:
  • 1/2 cup seedless raspberry spreadable fruit
  • 1 cup apple juice
  • 2 teaspoons grated lemon peel
  • 2 tablespoons lemon juice
  • 3 firm Bosc pears, peeled and cut into fourths
Instructions:
  • Combine all ingredients in a 10-inch skillet, then gently fold in the pears.
  • Bring the mixture to a boil, then lower the heat to medium-low. Simmer uncovered for about 30 minutes, spooning the juice over the pears and turning them every 10 minutes, until they are tender. Serve either warm or chilled.
