Poinsettia Cheesecake Squares

Cheesy bars topped with mint and strawberries, a festive addition to your holiday dessert spread.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup powdered sugar
  • 2/3 cup firm butter or margarine
  • 2 packages (8 ounces each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 package (10 ounces) frozen strawberries or raspberries in light syrup, thawed and undrained
  • Fresh mint leaves
  • 20 strawberries, each cut into 5 wedges
Instructions:
  • Preheat the oven to 350° F. Combine flour and powdered sugar in a medium bowl. Use a fork to cut in the butter until the mixture resembles fine crumbs. Press the mixture firmly and evenly into an ungreased 13x9x2-inch rectangular pan. Bake for 15 minutes.
  • Using a large bowl, whip cream cheese with an electric mixer until smooth and fluffy. Add granulated sugar and eggs, then mix well. Gently fold in thawed strawberries with their liquid. Spread this creamy mixture over the baked layer in the pan.
  • Bake for 20-25 minutes until the center is set. Allow it to cool completely for about 1 hour. Cover loosely and refrigerate for 2-3 hours until firm.
  • For presentation, slice into 5 by 4 rows. Garnish with mint leaves and strawberry wedges to resemble poinsettias. Keep covered in the refrigerator until serving.
