Crispy pan-fried polenta squares are a delicious treat!
Ingredients:
  • Melted butter, to grease
  • 1.5L (6 cups) water
  • 260g (1 1/2 cups) instant polenta (cornmeal)
  • 85g (1/2 cup) pitted green olives, chopped
  • 70g (1 cup) finely grated parmesan
  • 40g (1/4 cup) plain flour
  • 60ml (1/4 cup) olive oil
Instructions:
  • Grease a 20 x 30cm slab pan by brushing it with melted butter.
  • Simmer water in a saucepan. Gently pour in polenta while stirring constantly. Lower heat. Cook and stir for 3-5 minutes until soft. Add butter, olives, and parmesan. Season with salt and pepper.
  • Smooth the creamy polenta into the pan, creating a perfect surface. Let it cool, then cover and chill in the fridge to set.
  • Cut the polenta into 6 pieces, then coat with seasoned flour on a large plate, ensuring each piece is evenly covered.
  • Heat oil in non-stick pan over medium heat. Cook half of polenta for 4 minutes on each side until golden. Transfer to plate. Repeat with remaining polenta.
