Cheesy air fryer polenta squares with creamy cheese sauce. Quick, easy, and irresistible! Transform humble polenta into golden delights with delightful texture. Requires 1 hour cooling and 4 hours chilling.
Ingredients:
  • 875ml (3 ½ cups) Chicken Style Liquid Stock
  • 170g (1 cup) instant polenta
  • 40 g of shredded four-cheese cheese
  • 20.00 gm cornflour
  • 125ml (1/2 cup) Chicken Style Liquid Stock
  • 160g (2 cups) 4 cheese mix
  • ½ tsp sweet paprika
Instructions:
  • Prepare the 20cm square cake pan by generously greasing it with oil.
  • In a large saucepan over medium-high heat, bring stock, garlic, and ½ cup water to a boil. Gradually whisk in polenta in a steady stream until fully incorporated. Reduce heat to medium, cook for 2 minutes, stirring constantly until thickened. Remove from heat, stir in cheese, and season.
  • Spread the polenta evenly in the pan using the back of a spoon. Cover with non-stick baking paper and chill in the fridge for 4 hours or overnight until firm.
  • Transfer the polenta to a clean work surface, cut it into 4cm squares using a sharp knife, then spray or brush the squares with vegetable oil. Arrange the squares in batches in the air fryer basket and cook at 190C for 10 minutes until they are crispy and golden.
  • To prepare the cheese sauce, mix cornflour with 60ml (¼ cup) stock in a small bowl. In a medium saucepan, heat the remaining stock and cream until boiling. Simmer on medium-low heat for 3-4 minutes to reduce by one-third. Whisk in the cornflour mixture, increase heat to medium-high, and bring to a boil while stirring continuously. Cook and stir for 2 minutes until slightly thickened. Remove from heat, let cool for 5 minutes, then whisk in cheese and paprika. Season to taste.
  • Present the polenta squares with a generous drizzle of sauce for an elegant and delicious finishing touch.
