Irresistible polenta pizza bites: crispy, tender, and cheesy perfection.
Ingredients:
  • 1 (16 ounce) package Italian herb polenta tube, cut into 1/2 inch slices (12 slices)
  • 2 teaspoons extra-virgin olive oil
  • 1 (2.25 ounce) can sliced ripe olives, drained
  • 0.25 cup shredded mozzarella cheese
Instructions:
  • Preheat the air fryer to a sizzling 400 degrees F (200 degrees C).
  • Brush both sides of the polenta rounds with extra-virgin olive oil, then place half of them in the air fryer basket.
  • Air-fry for 15 minutes. Flip rounds with tongs and cook for 5 more minutes. Sprinkle half of the sliced olives and mozzarella cheese over the polenta. Cook until cheese melts, about 2 more minutes.
  • Layer the remaining polenta rounds, olives, and mozzarella cheese in the same manner.
