Air fryer cod with polenta, flour, and seafood seasoning breading for a tasty Friday night meal.
Ingredients:
  • olive oil cooking spray
  • 1 pound cod, about 1-inch thick, cut into 4 pieces
  • 0.25 cup polenta
  • 0.25 cup all-purpose flour
  • 1.5 teaspoons seafood seasoning (such as Old Bay®)
  • 1.5 teaspoons garlic salt
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika
Instructions:
  • Preheat the air fryer to 380 degrees F (195 degrees C) and generously grease the basket with cooking spray. Pat the cod dry with paper towels.
  • In a shallow dish, mix together polenta, flour, seafood seasoning, garlic salt, onion powder, pepper, and paprika. Press cod pieces into the mixture to coat evenly.
  • Lay the breaded cod in the air fryer basket, ensuring there is space between each piece for even cooking. Give the tops a light spray with cooking spray.
  • Place the pieces in the preheated air fryer and cook for 8 minutes. Flip each piece, generously mist with cooking spray, and cook for an additional 4 minutes.
