Crispy cod fish tacos with lime cabbage slaw cooked in an air fryer for a delicious and simple meal.
Ingredients:
  • nonstick cooking spray
  • 4 cups cabbage slaw mix
  • 1 tablespoon chopped fresh jalapeno pepper
  • 1 tablespoon lime juice
  • 1 tablespoon apple cider vinegar
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground cayenne pepper
  • 0.25 cup all-purpose flour
  • 0.25 cup yellow cornmeal
  • 2 tablespoons taco seasoning mix
  • 1 pound cod fillets, cut into bite-sized pieces
  • 8 (6 inch) corn tortillas
Instructions:
  • Preheat your air fryer to a toasty 400 degrees F (200 degrees C) and give the basket a quick spray with cooking oil.
  • In a large bowl, toss together cabbage slaw, jalapeño pepper, lime juice, olive oil, vinegar, salt, black pepper, and cayenne pepper until well mixed. Set aside.
  • In a medium bowl, combine flour, cornmeal, and taco seasoning until fully mixed. Add cod and coat evenly; discard any extra seasoning. Transfer the coated cod to the air fryer basket and lightly spray with cooking oil.
  • Air fry the fish for 5 minutes until it is crispy and flakes easily with a fork. Shake the basket, then continue cooking for an additional 5 minutes. Transfer the fish to a paper towel-lined plate to drain.
  • Transfer the cabbage slaw mixture into the air fryer basket.
  • Air fry the cabbage until it's beautifully caramelized, approximately 8 minutes, remembering to give it a good stir halfway through.
  • Divide the cabbage slaw equally among the tortillas and layer with the fish on top.
