Try quick and crispy air fryer blackened tilapia fish tacos for a moist and flaky treat.
Ingredients:
  • 1 (15 ounce) can seasoned black beans, rinsed and drained
  • 2 ears corn, kernels cut from the cob
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 0.5 teaspoon salt
  • 1 pound tilapia fillets
  • cooking spray
  • 0.25 cup blackened seasoning
  • 4 (6 inch) corn tortillas
  • 1 lime, cut into wedges
  • 1 teaspoon Louisiana-style hot sauce
Instructions:
  • Preheat the oven to a piping hot 400°F (200°C).
  • In a bowl, mix together black beans, corn, olive oil, lime juice, and salt until well combined; set aside.
  • Place the fish fillets on a clean work surface and gently dry them with paper towels. Lightly coat each fillet with cooking spray and evenly sprinkle half of the blackened seasoning on top. Then, flip the fillets over, spray again with cooking spray, and evenly sprinkle the rest of the seasoning.
  • Arrange the fish in a basket in a single layer in the air fryer, cooking in batches if needed. Air fry for 2 minutes. Flip the fish and air fry for an additional 2 minutes. Plate and serve.
  • Transfer the bean and corn mixture into the air fryer basket and air fry for 10 minutes, remembering to stir halfway through.
  • Fill corn tortillas with flaky, tender fish, and generously top them with a flavorful bean and corn mixture. Present with zesty lime wedges and spicy hot sauce for a delightful meal experience.
