Polka-Dotted Salmon Loaf

Economical and delicious salmon meatloaf with just one can of salmon.
Ingredients:
  • 1 cup milk
  • 2 cups Betty Crocker™ mashed potatoes
  • 1 cup shredded Cheddar cheese (4 ounces)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 medium green onions, chopped (1/4 cup)
  • 1 can (14 3/4 ounces) salmon, drained and flaked
  • 1 can (10 3/4 ounces) condensed cream of mushroom soup
  • 1 package (10 ounces) frozen green peas, partially thawed
  • 6 slices process American cheese
Instructions:
  • Preheat your oven to 350°F and generously grease an 8x8x2 inch square pan.
  • Combine all ingredients, excluding the cheese slices, then spread the mixture in the pan. Finish by layering the cheese slices on top.
  • Bake for 25 minutes, then allow to cool for 5 minutes before serving.
