Try a festive Pomegranate Mimosa for a classic Christmas sipper.
Ingredients:
  • 250.00 ml pomegranate juice (bottled)
  • 107.50 gm caster sugar
  • 40g ginger
  • 173.25 gm orange juice, strained
  • 750ml bottle sparkling wine, chilled
Instructions:
  • In a medium saucepan over high heat, mix pomegranate juice, sugar, and ginger. Boil while stirring until sugar dissolves. Lower heat to medium-low and simmer for 10 to 12 minutes until reduced by a third. Strain into a jug and refrigerate until chilled, about 30 minutes.
  • In each wine glass, pour 2 teaspoons of pomegranate syrup followed by 1 tablespoon of orange juice. Fill up the glass with wine and serve promptly.
