Pomegranate granita with orange cream

Brighten any meal with simple and flavorful pomegranate ice treats.
Ingredients:
  • 2 x 473ml btls pomegranate juice
  • 40.00 gm caster sugar
  • 125ml (1/2 cup) pouring cream
  • 1/4 tsp finely grated orange rind
  • 1 pomegranate, seeds removed
  • Fresh mint leaves, to serve
Instructions:
  • In a large saucepan over low heat, blend the pomegranate juice with sugar. Stir and cook for 2 minutes until the sugar dissolves. Bring to a boil, then simmer for 3 minutes to enhance flavors. Let it cool for 20 minutes before using.
  • Pour the pomegranate mixture into a 24 x 15cm (1.5L-capacity) shallow metal cake pan. Cover with foil and freeze for 1 hour until icy around the edges. Use a fork to break up the mixture roughly. Cover and return to the freezer for an additional 3 hours, breaking the mixture into coarse crystals with a fork every hour until firm.
  • In a small bowl, use an electric beater to whip the cream and orange zest until soft peaks form.
  • Take the granita out of the freezer. Use a fork to fluff the mixture into icy crystals. Spoon into chilled serving glasses and garnish with orange cream, pomegranate seeds, and mint.
