Impress with a showstopping pool party cake that's sure to make a splash and delight the kids!
Ingredients:
  • 3 x 440g packets golden buttercake cake mix (with icing sachets)
  • 2 x 85g packets berry blue jelly crystals
  • 9 honey-flavoured Tiny Teddy biscuits
  • 250g packet Marie biscuits
  • Green gel food colouring
  • 2 ice-cream wafers
  • 5 x 25cm blue sour straws
  • 10 Pep O Mint Life Savers
  • 1 white marshmallow
  • 1 white Honey Jumble biscuit
  • 2 rainbow sour straps
  • 1 little Hundreds & Thousands biscuit
  • 1/3 strawberry sour straw, halved lengthways
  • 2 sour ring lollies
  • 1 boiled lolly
  • 375g butter, softened
  • 337.50 gm icing sugar mixture, plus contents of icing sachets, sifted (see Emma’s tips)
  • 20.60 gm milk
  • Royal blue gel food colouring
  • 1 egg white
  • 225.00 gm pure icing sugar, sifted
  • 5.30 gm lemon juice
  • Red, green and yellow gel food colourings
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) while you prepare a 6cm-deep, 25cm round cake pan by greasing it and lining the base and sides with 2 layers of baking paper.
  • Prepare cakes according to packet instructions. Pour batter into pan and smooth the top. Bake for 1 1/2 hours, or until a toothpick inserted into the center comes out clean. Let it sit in the pan for 5 minutes, then flip it onto a wire rack lined with baking paper. Allow it to cool completely.
  • Prepare the jelly according to the instructions on the packet. Transfer it to a large, shallow dish and chill in the refrigerator for 2 hours, or until it thickens and starts to set.
  • For the buttercream, whisk butter with an electric mixer for 8 to 10 minutes until fluffy. Slowly mix in icing sugar until well combined, then add milk. Transfer 2/3 of the buttercream to a bowl. Color one portion dark blue and the other light blue with food dye.
  • Prepare Royal Icing: Whisk egg white in a bowl until foamy. Gradually add sugar, 1 tablespoon at a time, whisking until smooth. Stir in juice. Divide icing among 4 bowls and tint each portion with food coloring. Transfer icing to separate bags, snip off a corner, and pipe onto Tiny Teddy biscuits. Let icing set for 30 minutes before serving.
  • Prepare the cake by leveling the top. Then place the cake, cut-side down, on a round cake board. Use an 18cm round plate or cake pan to cut a 3cm-deep circle on the top of the cake to create a hollow center. Remove the cut-out circle. Coat the base and sides of the hollow center with light blue buttercream. Spread light blue buttercream on the top edge of the cake, and dark blue buttercream on the sides. Fill the hollow center with jelly and refrigerate until set.
  • Place the cake and round board onto a square cake board. Process Marie biscuits in a food processor until fine crumbs form. Add green food gel and continue processing until crumbs turn green. Sprinkle the green crumbs around the cake to create the grass. Cut the wafers into six 3cm squares and place them next to the pool as stepping stones. Cut 2 blue sour straws into five 7.5cm pieces, then cut them in half lengthwise to have a total of 10 pieces. Arrange the straws evenly around the outside of the cake. String Life Savers at even intervals and hang them between the sour straws, gently pressing onto the cake. Cut the remaining blue sour straws into two 11.5cm pieces and five 3cm pieces. Using a little plain icing, stick the 3cm pieces onto the 11.5cm pieces to create a ladder. Let it stand for 5 minutes until set. Place marshmallow on the cake according to the picture as a guide, then attach a Honey Jumble biscuit to the marshmallow to form a diving board, securing it properly. Lean the ladder against the cake.
  • Cut rainbow sour straps into four 4.5cm pieces to create towels, then use a sharp knife to cut the short ends of each piece to form a fringe. Arrange the towels around the pool. Place the Hundreds & Thousands biscuit in the pool as a li-lo, strawberry sour straw pieces as pool noodles, sour ring lollies as pool floaties, and a boiled sweet as a beach ball in the pool. Add Tiny Teddy biscuits in and around the pool using a bit of plain icing. Decorate with umbrellas around the pool and serve.
