Cool off with this refreshing summer beverage, ideal for BBQs and pool parties.
Ingredients:
  • 4 Lychee, Lime and Passionfruit Herbal Infusion tea bags
  • 24 mint leaves, torn
  • 1000.00 gm boiling water
  • 1050.00 gm canned pineapple juice, chilled
  • 4 passionfruit, halved
  • 6 lychees, peeled, deseeded, chopped
  • 750.00 ml ice cubes
  • 500.00 ml ginger beer, chilled
Instructions:
  • In a large, heatproof jug, combine tea bags with half of the mint. Pour in boiling water and gently jiggle tea bags for 1 minute. Remove tea bags, then refrigerate until cold.
  • In two large carafes, carefully distribute the chilled tea, pineapple juice, passionfruit pulp, lychee, and the rest of the mint. Gently stir until the passionfruit seeds separate and the tea is thoroughly mixed. Refrigerate until serving.
  • Fill each glass halfway with refreshing tea, generously add ice cubes, and finish off with a delightful pour of zesty ginger beer. Serve the tantalizing iced tea right away for the ultimate refreshment.
