Homemade cinnamon sugar Pop-Tarts® bursting with flavor, just like the original but made from scratch!
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 cup chilled unsalted butter, cut into cubes
  • 0.5 teaspoon vanilla extract
  • 0.25 cup cold water
  • 0.25 cup unsalted butter, softened
  • 0.25 cup white sugar
  • 2 tablespoons ground cinnamon
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare 2 baking sheets by lining them with parchment paper.
  • Combine flour, 1 tablespoon sugar, and salt in a bowl. Use a pastry blender or 2 knives to cut in chilled butter until the mixture looks like small peas. Stir in vanilla. Gradually add cold water, 1 tablespoon at a time, until the dough comes together to form a ball.
  • Separate dough into 2 portions and tightly wrap each with plastic wrap. Refrigerate until firm, for at least 1 hour.
  • Combine softened butter, 1/4 cup sugar, and cinnamon in a bowl and mix until smooth to create the filling.
  • On a lightly floured work surface, roll out the dough to 1/2-inch thickness. Use a knife to cut the dough into rectangles. Place 1 tablespoon of filling onto half of the rectangles, then top with the remaining rectangles. Seal the edges by pressing with a fork and poke a few holes in the top of each pastry with a toothpick.
  • Place the pastries neatly on the prepared baking sheets.
  • Bake in the preheated oven until golden brown, for 25-30 minutes. Then, cool pastries on a wire rack for about 15 minutes.
