Delicious popovers with a crispy outside and soft inside. Customize with sweet or savory fillings like custard or jam. Bake now, freeze extras for later. Perfect for holidays, roasts, or breakfast.
Ingredients:
  • Butter, to grease the muffin tins
  • 1 cup milk (skim, 2% or whole)
  • 1 teaspoon sugar
  • 1 cup all-purpose flour
  • 3 tablespoons unsalted butter, melted
Instructions:
  • Preheat the oven to 425°F and generously grease a standard muffin tin with butter, ensuring the bottom, sides, and area between the cups are well coated. Adjust the oven rack to the lower third position.
  • Bring ingredients to room temperature: Submerge eggs in a bowl of hot water for 10 minutes. Warm cold milk in the microwave for 30 seconds until it feels warm (or heat on stove in a saucepan).
  • For the batter, start by cracking the eggs into a blender. Add in the milk, salt, sugar, and flour, then blend until smooth and frothy, about 30 seconds. Lastly, pour in the melted butter and blend until everything is well-combined. If you prefer, you can also whisk the ingredients together in a large bowl.
  • For baking the popovers, simply pour the batter into muffin cups slightly more than half-full. Bake on the lower shelf of the oven without opening the door for 20 minutes to allow steam for rising. Lower the temperature to 350°F and bake an additional 8 minutes. Peek to check if popovers are deep golden brown; if not, bake for another 5 minutes until puffed and perfectly browned.
  • Serve: Enjoy warm popovers fresh from the oven as a delightful addition to any meal, just like a roll. Alternatively, savor them for breakfast with a spread of butter and jam.
