Garlic-infused meatballs with rice, cooked in a savory tomato soup sauce for a satisfying family dinner.
Ingredients:
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 pound ground beef
  • 1 cup uncooked instant rice
  • 1 egg, slightly beaten
  • 0.25 cup minced onion
  • 2 tablespoons shortening
  • 1 clove garlic, minced
  • 1 teaspoon prepared mustard
Instructions:
  • Mix together 1/4 cup of tomato soup with ground beef, rice, egg, onion, and salt in a large bowl until well combined. Shape into 16 meatballs.
  • Combine the remaining tomato soup with half a can of water and mustard in a small bowl.
  • In a large skillet over medium heat, melt the shortening. Add garlic and meatballs, cooking and gently stirring until browned all over. Drain any excess fat. Pour in tomato soup and mustard mixture, then simmer for 20 minutes, stirring occasionally, until meatballs are fully cooked.
