Pork, radish and rocket salad

Tender pork slices paired with peppery arugula salad.
Ingredients:
  • 600g pork loin steak
  • 36.80 gm oil
  • 100g baby rocket leaves
  • 1 bunch radishes, trimmed, cut into matchsticks
  • 40.00 ml apple cider vinegar
  • 5.90 gm wholegrain mustard
  • 5.00 gm caster sugar
  • 2 apples, peeled, thinly sliced
Instructions:
  • Coat the pork with a drizzle of oil. Grill on a barbecue or chargrill for 3-5 minutes per side until fully cooked. Tent loosely with foil and let it rest for 10 minutes.
  • Combine rocket, radish, and apple in a large bowl. Drizzle the mixture with a blend of vinegar, mustard, sugar, and the rest of the oil. Toss everything together to mix well.
  • Slice the succulent pork and serve alongside the fresh and vibrant salad.
